- 2 cups Quinoa
- 1 cup Sour Cream
- 1 jar Salsa
- 1 tsp Garlic Powder
- 1 tsp Cumin
- 1 can Corn drained
- 1 can Black Beans drained and rinsed
- 2 cups Shredded Chicken
- 1 1/2 cups Shredded Cheese your choice or Cheddar
1. Cook the Quinoa2. Preheat the oven to 350 degrees.3. Combine the sour cream, salsa, garlic powder, and cumin in a large mixing bowl.4. Add the quinoa, corn, black beans, chicken and shredded cheese into the sour cream mixture. Stir until it is all combined.5. Prepare a slightly greased 9x13 baking dish and pour the mixture in.6. Bake for 25 minutes.7. Serve it up into bowls and top with avocado, tomatoes and anything else you'd like.
