Baked Fiesta Quinoa Bowl

Ingredients
  

  • 2 cups Quinoa
  • 1 cup Sour Cream
  • 1 jar Salsa
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 can Corn drained
  • 1 can Black Beans drained and rinsed
  • 2 cups Shredded Chicken
  • 1 1/2 cups Shredded Cheese your choice or Cheddar

Method
 

  1. 1. Cook the Quinoa
    2. Preheat the oven to 350 degrees.
    3. Combine the sour cream, salsa, garlic powder, and cumin in a large mixing bowl.
    4. Add the quinoa, corn, black beans, chicken and shredded cheese into the sour cream mixture. Stir until it is all combined.
    5. Prepare a slightly greased 9x13 baking dish and pour the mixture in.
    6. Bake for 25 minutes.
    7. Serve it up into bowls and top with avocado, tomatoes and anything else you'd like.
