A great thing about the beginning of Autumn is that it’s the perfect time to eat your meals outside, out on the veranda. It isn’t too hot like in the scorching summer and it isn’t too cold.
This is one of my favorite recipes that I could eat over and over again and it is the perfect bowl to enjoy outside. There is some of that warmth and yet plenty of fresh flavors, perfect for this time of year.
Let me start off by saying the recipe makes more than a bowl. It will be made in a casserole dish so there are at least 4 servings.
You can substitute the quinoa for anything such as noodles, or rice and it will be delicious with anything, but I like to make a quinoa bowl. Quinoa has less carbs and is higher in protein, so for this kind of recipe that I know I’m bound to eat a lot of, I stick with quinoa.
The recipe is also very easy to make by just combining the ingredients in a bowl. Once everything is mixed, put it into a casserole baking dish and into the oven for about 25 minutes. There you have it, and quick and delicious recipe.

Baked Fiesta Quinoa Bowl
Ingredients
- 2 cups Quinoa
- 1 cup Sour Cream
- 1 jar Salsa
- 1 tsp Garlic Powder
- 1 tsp Cumin
- 1 can Corn drained
- 1 can Black Beans drained and rinsed
- 2 cups Shredded Chicken
- 1 1/2 cups Shredded Cheese your choice or Cheddar
Instructions
- 1. Cook the Quinoa2. Preheat the oven to 350 degrees.3. Combine the sour cream, salsa, garlic powder, and cumin in a large mixing bowl.4. Add the quinoa, corn, black beans, chicken and shredded cheese into the sour cream mixture. Stir until it is all combined.5. Prepare a slightly greased 9×13 baking dish and pour the mixture in.6. Bake for 25 minutes.7. Serve it up into bowls and top with avocado, tomatoes and anything else you'd like.
